The objectives of this study were the characterization of the bacterial communities associated with the spoilage of RTE baby spinach and rocket, as well as the monitoring of the changes occurring in their structure during storage at different temperatures. A better understanding of the bacterial communities and the impact of various environmental factors on their composition is essential to ensure the production of safe and high-quality fresh-cut produces.
