In 2021, according to the latest Eurispes Report, in Italy vegetarians (i.e. consumers who have chosen to eliminate meat and fish from their plates) and vegans (i.e. those who have decided to eliminate milk and derivatives, eggs, honey and other products of animal exploitation) would amount to a total of 8.2% of the population, thus outlining a consolidated trend. There are three main reasons for this choice: ethics, environment and health (not necessarily coexisting, but closely linked). This paper aims on the one hand to highlight the interconnections between the various drives within the vegan world and on the other hand to analyse, from a transcale perspective, the dissenting practices implemented by vegan activists against the current dominant thinking that sees animals and the environment as commodities to be exploited. The privileged context within which to read these critiques will be the current pandemic state and the links between recent global events related to public health and global deforestation hotspots.
