Maize from different maturity groups (short cycle vs long cycle), N fertilization rate (no fertilization vs high fertilization) and tillage systems (intensive tillage vs direct drilling) were harvested. Moisture, water activity, total fungal contamination and Fusarium contamination of all maize types were measured just after harvest and 4, 7 and 10 days after harvest, being kept at 15 or 25 ºC. Concentrations of DON, FB1 and FB2 of all maize types were measured just after harvest and 5 and 10 days after harvest, being kept at 15 or 25 ºC. The dataset contains all the obtained results.
