Lactobacillus acidophilus, originally isolated from the infant feces and commonly found in the human gastrointestinal tract, is characterized as an facultative anaerobic Gram-positive bacterium with elongated rod-shaped form. The optimum growth temperature of Lactobacillus acidophilus is about 35-45 Centigrade, while the optimum fermentation pH ranges from 4.0 to 6.5. Lactobacillus acidophilus has been certified as GRAS (Commonly Recognized as Safe, GRAS) by the European Union with the long-term validation of clinical trials. Actually, Lactobacillus acidophilus is widely accepted as a probiotic with a variety of benefits for the human body, for example, alleviating cancer, lowering cholesterol, and regulating immunity. Therefore, Lactobacillus acidophilus is an important industrial strain and is expected to show great potential in fermentation of the health food.
