This dataset provides detailed measurements of cumulative and instantaneous gas production from in vitro fermentation experiments conducted over a 96-hour period. The study investigates the effects of three forage levels—high, medium, and low—combined with four dietary treatments: no buffer, sodium bicarbonate, sodium carbonate, and potassium carbonate. Measurements were taken under both control conditions and an induced acidosis challenge. The dataset includes time-resolved gas production values (mL/g DM) at multiple time points, enabling analysis of fermentation kinetics, peak gas production rates, and the effects of buffering agents on ruminal microbial activity. This dataset can be used for modeling fermentation dynamics, evaluating buffer efficacy, and optimizing diet formulations in ruminant nutrition research.
