The metatranscriptome from the rind of a smear-ripened cheese was sequenced during ripening, from day 5 to day 35. The cheese was inoculated with four species: Geotrichum candidum, Debaryomyces hansenii, Lactobacillus delbrueckii, Streptococcus thermophilus and Brevibacterium. Sequencing was performed after rRNA depletion, using an Illumina HiSeq device
