Daqu is a fermentative saccharifying agent that is used to initiate fermentation in the production of Chinese baijiu. In this study, we performed metagenomic analysis of microorganisms present in shilixiang baijiu Daqu in order to analyse the bacterial community diversity of shilixiang baijiu Daqu from four different fermentation batches and determine the effect of fermentation process on microorganisms. An understanding of the composition and structure of bacterial communities of the shilixiang baijiu Daqu can provide a theoretical basis for stability and quality evaluation of shilixiang baijiu Daqu-making technology.
