<p>This dataset provides physicochemical and bioactivity results for chlorophyll-rich microcapsules produced using polysaccharide (Nutriose, inulin, maltodextrin) and protein (soy and pea protein isolates) carriers, manufactured by spray drying at three inlet temperatures (160, 170, and 180 °C). It includes UPLC–PDA/ESI–QToF–MS identification and quantification of carotenoids, chlorophylls, pheophytins, and pheophorbides, together with indicators of chlorophyll retention and stability across formulations. In vitro enzyme inhibition data (α-amylase, α-glucosidase, β-glucosidase, and DPP-4) are also included to support evaluation of antidiabetic potential and the influence of carrier type versus drying temperature.</p>
