This dataset contains raw microbiological data generated from controlled relaying experiments conducted with oysters (Magallana gigas) and mussels (Perna perna) on the subtropical coast of Brazil. The experiments were designed to quantify microbial decay dynamics in bivalve molluscs transferred from contaminated growing areas to approved clean relaying sites.
Microbial indicators of sanitary quality were measured in mollusc meat over time, focusing on Escherichia coli and Vibrio parahaemolyticus, two key microorganisms used in shellfish safety assessment and regulatory monitoring. Samples were collected at defined time intervals during the relaying period, allowing the evaluation of temporal decay patterns under subtropical environmental conditions.
The dataset includes measurements of microbial concentrations expressed as Most Probable Number (MPN) per 100 g of mollusc tissue, along with associated metadata describing species, sampling time, experimental conditions, and replicate structure.
