Microbial transmission and succession during cheese production. The objectives of this study were to (i) describe the microbial ecosystem of a traditional farmstead cheesemaking environment; (ii) characterize the microbial composition and succession during the production of a traditional raw milk farmstead cheese and; (iii) infer pathways of microbial transfer along the cheesemaking continuum.
