Supplemental videos associated with Chapter 3 of the MSc thesis: Effect of protein functionality in plant-based dairy alternatives. These videos show 3D rotating models of the free oil volume segmentations in plant-based cheeses, and were obtained from Synchrotron-based micro-computed tomography experiments.
