This study investigated the prebiotic effect of blackcurrant extract using the human fecal culture model. Feces was individually inoculated into a medium with or without blackcurrant extract, then fermented in anaerobic condition. The results obtained from the analysis of the fermented medium sample are as follows. Medium pH with blackcurrant extract significantly decreased after fermentaion. In the analysis of the fermented medium microbiota based on 16S rRNA gene sequences, an increase in Bifidobacteriaceae and a decrease in Lachnospiraceae were significantly observed. In addition, we quantified indole and ammonia known as putrefactive components in fermented medium. All subjects exhibited suppression efficacy for ammonia production. These findings suggest that a blackcurrant extract might be a potential candidate that regulates ammonia production.
