Dataset for: Interfacial Effects and Emulsion Stabilization by In Situ Surfactant Generation through the Saponification of Esters

This data set includes dynamic oil-water interfacial tension and dynamic air-oil surface tension measurements using a Kruss DSA 100 tensiometer. Measurements were conducted to explore the reaction dynamics of and emulsion stabilization by surfactants that are created at interfaces during emulsification and pendant drop testing. Specifically, measurements of dynamic interfacial tension for stagnant and oscillatory pendant drops were combined with emulsion stabilization experiments to obtain insight on the rate and extent of reaction in emulsion systems for commonly used oil phases.
