Brevibacterium are of great interest to the food industry because they produce amino acids such as glutamic acid which is of use in the production of flavor inducer such as monosodium glutamate. They also produce important enzymes used in cheese ripening and hold other industrial importance. B.casei genome annotation showed a nearly 14.5% gene involved in amino acid synthesis and degradation. There are many other genes which holds probiotic property. In our study B.casei NAB46 Isolated from First degree relative of Celiac disease patients.
