Raman spectra and HPLC‑MS data for unirradiated or UV‑irradiated chiral amino acids and sugars

This dataset comprises Raman spectra obtained from chiral amino acids and sugars. Sample compositions are indicated in the panel subtitles, where names without a simulant suffix correspond to pure, unmixed samples, while “JMSS-1” and “CHG” denote mixtures containing those respective simulants.The legend defines the experimental treatment groups: samples with no infix were untreated dark controls, “UVB” indicates exposure from a UVB-dominant lamp, and “UVC” signifies treatment using a UVC-dominant lamp. The suffix “7mW” or "10mW" specifies the laser power applied during Raman spectroscopic analysis.Additionally, the dataset includes HPLC chromatograms and corresponding MS mass spectra for the chiral amino acids, captured both before and after UV irradiation.
