A target-oriented metagenomic approach has been applied to winemaking samples (berries, musts and wines) in order to asses the bacterial winemaking microbiome, characterize and compare its diversity along the production chain (from field to the final product) and across different Apulian wine appellations.The study demonstrates the potential of the metagenomic approach, based on Next Generation Sequencing (NGS) technologies, in identifying a large number of species involved in the wine production. The developed experimental workflow opens new intriguing prospects in many other research fields were micro-organisms play key-roles.
