Fermentation microorganisms play an integral role in the formation of Anhua dark tea quality, involved in the decomposition, synthesis, and conversion of various chemical components. Further, partial fermentation microorganisms are still present in Anhua dark tea after fermentation, which has a significant impact on the safety of Anhua dark tea consumption. Therefore, high-throughput ITS and 16S rDNA amplicon sequencing were conducted to reveal the fungal and bacterium communities in Anhua dark tea.
