This study screened 195 bacterial strains from rabbit feces and identified Bacillus subtilis YT883 as a high - enzyme - producing strain with efficient cellulase, amylase, and protease activities. Genome analysis revealed YT883 possessed abundant enzyme - related genes. It showed strong tolerance to pH, high temperature, salt, bile salts, and artificial gastrointestinal fluids, indicating good potential for growth in industrial and gastrointestinal environments. When used to ferment okara (soybean residue), YT883 significantly enhanced the nutrient components and antioxidant activity of the okara. These findings highlight the potential of B. subtilis YT883 as a probiotic and in the value - added utilization of soybean residues.
