The wine ecosystem consists of various native and inoculated yeasts which have the potential to interact and ultimately, impact wine organoleptic properties. The molecular mechanisms behind interaction phenotypes are not well understood and specifically, the effect of cell-cell contact on transcriptional regulation has not yet been explored within this context. Here we describe a transcriptional analysis of monocultures, co-cultures with cell-cell contact (traditional mixed wine fermentations) and co-cultures without cell-cell contact.
