This data set provides three sets of duplicate data on wheat raw grain quality, brewing quality, and volatile flavor compounds under six nitrogen application rates (0, 45, 90, 135, 180, and 225 kg hm ⏴ 2) using Mianmai 902 (non waxy) and Zhongke Zinuomi 168 (waxy) in Dayi County, Chengdu City, Sichuan Province, for two consecutive years in 2019 and 2020.
