A validated food frequency structured questionnaire, adapted from the international dietary data expansion project (Thompson et al., 2003) was used to assess the consumption pattern of fish, fruits and vegetables amongst households in Ado Ekiti. Tilapia, catfish, mackerel (titus), stockfish, herring, sardine, hake and croacker were investigated under fish. In the case of fruits, banana, orange, mango, pawpaw, watermelon, pineapple, quava, avocado and coconut were assessed while under vegetables, tomato, onion, okra, spinach, bitter leaf, pumpkin, garden egg, carrot, cabbage, green beans, bell pepper and scotch bonnet were investigated. The questionnaire was divided into 4 sections A-D. Section ‘A’ provided information on the socio-demographic characteristics of the participants, while Section ‘B’ investigated the fish the consumption frequency, quantity and modes of the different amongst the households. Sections ’C’ and ‘D’ examined consumption frequencies, quantities and modes of the fruits and vegetables. For data analysis, frequency of consumption scores for the respective fish, fruits and vegetables were recorded as 1= Never consumed, 2= consumed once in 2 months, 3= consumed 1-3 times monthly, 4= consumed once weekly, 5= consumed 2-4 times weekly, 6= consumed 5-6 times weekly, 7= consumed daily. Participants’ average cumulative scores for a particular fish, fruit or vegetable formed the mean consumption frequency score. In the case of consumption quantity for the fish and fruits, scores of 1, 2, 3, 4, 5, 6 and 7 were allocated for consumption of ½ piece, 1 piece, 1½ pieces, 2 pieces, 2½ pieces, 3 pieces and > 3 pieces per servings, respectively. In the case of the vegetables, scores of 1, 2, 3, 4 and 5 were allocated for consumption of 600 g per serving, respectively. Participants’ average cumulative scores for a particular fish, fruit or vegetable formed the mean consumption quantity score. Out of 1,500 questionnaire distributed, 1369 questionnaires were retrieved, giving a recovery rate of 91%.
