Dataset of aroma release in vivo (Digimouth)

This dataset contains different files related to Digimouth project: (i) conc_XX datasets contains information about the aroma release of acetate isoamyl during different protocols (ii) metadata_XX contains the metadata for the samples (iii) int_XX contains the sensory intensities (iv) senso_XX contains the times of events during the tasting (swallowing, chewing...) XX can be 'gel' for gellified discs, 'sol' for solution and 'gus' for solution delivered by gustometer. The initial concentration of all these matrices in acetate isoamyl (ACI) is 0.4g/L
