In this study, we compared the transcriptome and metabolite differences between subgroups of taste differences in two groups of NHCCs of various colors. Then, we discovered metabolites and genes that affect taste, and through association analysis, we created regulatory networks that control taste-related metabolites. We also summarized the main genes governing palatability in two different groups of colored NHCCs.
