We conducted an in vitro digestion study on four functional soups, analyzing their bioactivity at different digestion stages compared to undigested samples. analyses included:<b>Anticholinesterase inhibition</b> – Evaluating potential neuroprotective effects, possibly linked to anti-Alzheimer's activity.<b>ABTS &amp; DPPH assays</b> – Measuring antioxidant capacity.<b>Anti-GR (Glutathione Reductase) &amp; Anti-GPX (Glutathione Peroxidase) activity</b> – Assessing redox balance and potential protective effects against oxidative stress.<b>SOD (Superoxide Dismutase) activity</b> – Determining the ability to counteract superoxide radicals.
