This research aimed to find the optimal condition for cultivating sprouted brown rice. The following conditions were optimized: cultivation water (distilled water (DW) or slightly acidic electrolyzed water (SAEW) with the addition of effective microorganisms), dark cultivation period, seeding density, water level, and temperature. The parameters measured were: average length, sprouting ratio, fresh weight, dry weight, and GABA content. First, the optimal cultivation water was determined by combining DW and SAEW with six levels of EM concentrations (0, 0.250, 0.625, 1.000, 1.375, and 1.750 ml/l). Then, single factor experiments were performed by changing the dark treatment duration, seeding density, water level, and temperature. Each factor was studied separately while fixing all other factors to the standard condition. The standard condition was as follows: cultivation water of SAEW with an EM concentration of 1.00 ml/l, dark treatment for 24 h, seeding density of 0.150 g/cm², water level of 1.5 cm, and culture temperature of 30 °C. The data for these two experiments are uploaded as files 1_1 and 1_2. Following the single factor experiments, an orthogonal experiment was performed by changing three factors: temperature, seeding density, and water level. The data for this experiment is uploaded as file 2. Finally, the GAD level was measured to up to 9 days of cultivation. The data for this experiment is uploaded as file 3.
