(1) Data Content (including elements and their respective meanings): This dataset mainly covers historical quality data of highland barley and wheat in the Qinghai-Tibet Plateau from 1988 to 2018, involving 28 quality indicators, including moisture content, total starch content, amylose content, protein content, lysine content, vitamin content, fat content, β-glucan content, soluble sugar content, ash content, carbohydrate content, total phenol content, flavonoid content, test weight, kernel hardness, falling number, peak viscosity during starch gelatinization, initial gelatinization temperature of starch, flour yield, farinograph quality index, maximum extensigraph resistance, extensigraph area, extensibility, dough development time, dough stability time, water absorption, degree of softening, and wet gluten content.
(2) Data Source and Processing Method: All data are derived from published academic papers and books.
