In the actual production, the storage time of the Daqu is operated by experience, which has certain risks. In this study, we used high-throughput sequencing technology to analyze the diversity of microbial communities of credit wine at different storage periods, to analyze the community composition and differences of different microorganisms during storage, to improve the microbial database of strong aromatic liquor, and to provide a theoretical basis for improving the storage time of liquor to improve the subsequent liquor brewing process.
