粮食加工品中的二氧化硫残留,经口摄入二氧化硫的主要毒性表现为恶心、呕吐等。此外,二氧化硫可影响钙吸收,导致机体钙流失。粮食加工品中的二氧化硫的检测,为政府部门监管提供依据,避免因二氧化硫残留量超标使用而产生食品安全问题,进一步保障消费者的食品安全。1.数据采集:采集样品编号、检验数量、样品名称、项目、方法、最大限定值、报告值、单位等信息;2.数据处理:(1)是否超出标准值,报告值为未检出、报告值小于等于最大限定值的为未超出,反之为超出,具体使用IF、OR的函数;(2)粮食加工品中的二氧化硫含量监测总数:为数据统计范围内总检验数量;(3)粮食加工品中的二氧化硫含量检出问题项次数:通过SUMIF函数将超出标准值的检验数量求和;(4)粮食加工品中的二氧化硫含量问题发现率=粮食加工品中的二氧化硫含量检出问题项次数/粮食加工品中的二氧化硫含量监测总数*100%。

Sulfur dioxide residue in grain processing products: The main toxic manifestations of oral intake of sulfur dioxide include nausea, vomiting and other symptoms. Additionally, sulfur dioxide can impair calcium absorption and result in calcium loss in the organism. The detection of sulfur dioxide in grain processing products provides a basis for government supervision, prevents food safety incidents caused by excessive sulfur dioxide residues, and further safeguards food safety for consumers. 1. Data Collection: Collect information including sample ID, inspection quantity, sample name, test item, detection method, maximum allowable limit, reported value, unit and other related data. 2. Data Processing: (1) Judgment of exceeding standard limits: Use IF and OR functions. Samples with a reported value of "not detected" or a reported value less than or equal to the maximum allowable limit are judged as non-excessive, while the others are judged as excessive. (2) Total number of sulfur dioxide content inspections for grain processing products: The total number of inspections within the data statistical scope. (3) Number of problematic items detected for sulfur dioxide content in grain processing products: Sum the quantity of inspections with excessive residues via the SUMIF function. (4) Problem detection rate of sulfur dioxide content in grain processing products = (Number of problematic items detected / Total number of inspections) × 100%.
