The yeast species and varieties that comprise the genus Kluyveromyces show intriguing variation in their ability to utilize lactose. K. lactis var. drosophilarum, is lactose negative, unable to utilize this sugar at all. This species was sequenced and assembled to study the origin of lactose fermentation in comparison to K. lactis var. lactis and all the other species in the Kluyveromyces genus.
