This dataset contains experimental data supporting the study “Microencapsulation of green tea polyphenols: Utilizing oat oil and starch-based double emulsions for improved delivery”. The study investigated water-in-oil-in-water (W/O/W) double emulsions as delivery systems for green tea polyphenols, with particular emphasis on improving their stability and potential bioavailability. The deposited data include measurements related to the total phenolic content of green tea extracts and formulated systems. The dataset contains raw spectrophotometric measurements, replicate values, blank corrections, dilution factors, sample preparation parameters, and calculations used to express total phenolic content as gallic acid equivalents. The data provide the underlying experimental values used to assess phenolic recovery and retention during the development and characterization of green tea polyphenol delivery systems.
