Included here are the datasets received from the Mass Spectrometry Facility (John Asara Laboratory) at the Beth Israel Deaconess Medical Center in Boston, Massachusetts, United States. The datasets are the peak aligned and lipid species-identified LC-MS/MS data output from LipidSearch (ThermoFisher). Samples of in vitro and in vivo adipose tissue were lipid extracted using methyl tert-butyl ether (MTBE) and dried under nitrogen, then submitted to the John Asara Laboratory at the Beth Israel Deaconess Medical Center. LC-MS/MS (lipidomics) was performed on the samples in accordance with Breitkopf et al. 2017. (https://link.springer.com/article/10.1007/s11306-016-1157-8) In our paper "Aggregating in vitro-grown Adipocytes to Produce Macroscale Cell-Cultured Fat with Tunable Lipid Compositions for Food Applications", we processed these datasets to quantify the triacylglyceride and phospholipid contents of our various adipose samples in accordance with https://github.com/mksaad28/Yuen_et_al This dataset includes data on other lipids that are not triacylglycerides/phospholipids. The dataset additionally includes lipidomics data of commercially bought beef and chicken fat, which were not used in our paper.
