Koji was prepared by culturing mold strains of Aspergillus oryzae on seaweeds including nori (Pyropia yezoensis) 1G, nori 2G, nori 6G, akamoku (Sargassum horneri) and Konbu (Sacccharina japonica). Microbial compsition of these seaweed kojis was examined based on 18S rRNA and 16S rRNA sequences.
