This dataset accompanies an experiment evaluating fungistatic options to limit mycotoxigenic fungi in stored maize under controlled moisture and storage-time conditions. A fully randomized factorial design (3 fungi × 3 grain moisture levels × 5 inhibitor treatments) with three replicates was used. Target fungi were Aspergillus flavus, A. fumigatus, and Fusarium verticillioides. Grain moisture was adjusted to 12%, 15%, and 18%. Inhibitor treatments were: (i) Larrea tridentata extract (10 mL L⁻¹), (ii) azadirachtin (85%; 20 mL L⁻¹), (iii) aluminum phosphide (3 mg L⁻¹), (iv) organic-acid mix (ascorbic 1% + citric 0.25% + lactic 0.25%), and (v) untreated control. Outcomes include fungal incidence in moist-chamber assays at 10, 20, and 30 days post-inoculation (DPI), incidence on stored grain at 30, 60, and 90 DPI, and aflatoxin concentrations (B₁, B₂, G₁, G₂) at 90 DPI for A. flavus and A. fumigatus. Units: incidence (% of kernels with visible growth) and aflatoxins (mg kg⁻¹).
