MALDI-TOF spectra of bovine, caprine and ovine milk and their mixtures

In this dataset we provide MALDI-TOF spectra of bovine milk in caprine and ovine milk. The dataset contains normalized spectra of pure milk samples and their mixtures. Different level of adulteration (0.5%, 1%, 5%, 10%, 20%, 40%, 60%, 80%) were analyzed throughout the lactation period of goat and sheep. Two different ranges of peptide-protein spectra (500–4000 Da; 4–20 kDa) were used. Exported spectra are in TXT files (m/z and intensity) for processing in other software (ex. mMass). Acquisition methods are included. MALDI-TOF MS analysis was performed using an Autoflex Speed (Bruker Daltonics, Germany) equipped with a SmartBeamTM II laser (355 nm) and flexControl software (version 3.4 Build 135, Bruker Daltonics, Germany).
