Network analysis, which consisted of recording the distances traveled by representative foods from food groups considered key or most important (vegetables, grains, tubers, fruits, legumes, and dairy products). This was carried out by collecting data on their geographic origin (producer) and final destination (consumer) using a sample of 15 stalls per market. To map the networks by food group, a minimum of five vendors or stalls per food group were randomly identified. When it was not possible to find at least five vendors per food group, information was collected from all available vendors. The instrument used was a structured survey divided into two parts: (1) a format with questions directed to the vendor, recorded using digital tablets; and (2) a printed format with questions for the consumer, which was left with the vendor. This second part relied on the collaboration of the vendors (with prior consent and willingness), who were asked to record information on the location of consumers—or the final destination of the products—who made purchases at their stalls during the market day.
