This technology provides a high performance liquid chromatography (HPLC) analysis method for tannic acid. Specifically, first dissolve tannic acid with an organic solvent or water to prepare the sample solution to be tested. Elute the solution using HPLC to obtain the HPLC fingerprint chromatogram of tannic acid, and conduct qualitative analysis on different components in tannic acid via liquid chromatography-mass spectrometry (LC-MS). Establish a mathematical model between the retention time and degree of polymerization of each component by analyzing the correlation between the retention time and degree of polymerization of different oligomeric polyphenol compounds in tannic acid. Substitute the retention time of each component into this mathematical model to calculate the degree of polymerization (molecular weight) of the corresponding compound. Calculate the content of each component of tannic acid using the area normalization method based on the chromatographic peak areas of different components. This method features simple operation, high accuracy, high sensitivity and short analysis time.
