Biochemical indicators of oyster tissue during hypothermic preservation

Primary dataset of biochemical analyses of oyster tissue following hypothermic storage. The dataset includes quantitative measurements of total protein content, lactate dehydrogenase (LDH) activity, lipase activity, gamma-glutamyl transferase (GGT) activity, and glucose-6-phosphate dehydrogenase (G6PD) activity. Data are provided in a structured and standardized format with clearly defined units, assay conditions, and methodological details, enabling reproducibility and reuse. These measurements support comparative analysis of metabolic and enzymatic changes associated with hypothermic exposure in oyster tissues and can be integrated into broader studies on stress physiology, preservation methods, and aquatic organism biochemistry. All biochemical studies were performed using Rendoks kits, Ukraine, in accordance with the manufacturer's instructions.
