This dataset contains thermogravimetric (TGA) and differential scanning calorimetry (DSC) data for collagen isolated from Baltic salmon using different extraction methods. The results are compared with commercial fish collagens and gelatin to evaluate thermal stability, degradation behavior, and structural differences between collagen sources and isolation procedures.
