食品安全预警监控是根据致病微生物16S RNA等特征序列,进行微生物物种鉴定;再结合微生物传播特征、途径;综合食品加工、运输过程,建立预警监控模型,提供食源性微生物污染的预警监控。建立食品安全预警体系,避免发生严重的食品安全问题。提高我国食品安全与风险管理水平,适应全球食品安全管理的发展趋势。
Food safety early warning and monitoring refers to identifying microbial species based on characteristic sequences such as 16S rRNA of pathogenic microorganisms. Then, by integrating the transmission characteristics and routes of microorganisms, as well as the entire processes of food processing and transportation, an early warning and monitoring model is established to provide early warning and monitoring for foodborne microbial contamination. By constructing such a food safety early warning system, severe food safety incidents can be avoided. This will enhance China's food safety and risk management level and align with the development trends of global food safety management.
