This study describes the genome sequence and subsequent annotation of Hanseniaspora guilliermondii UTAD222, a strain that belongs to a wider yeast culture collection and that showed interesting properties to be used in mixed-culture fermentations with S. cerevisiae given its interesting traits, such as the ability to resist to relatively high ethanol concentrations, low production of H2S, high proteolytic and β-glycosidase activity. Mixed-culture wine fermentations provided evidences that the presence of this non-Saccharomyces strain impacts S. cerevisiae fermentative performance and significantly enhanced the floral and fruity character of wine. It is expected that the analysis of the genome sequence could help in understanding the molecular mechanisms underlying the distinct phenotypic traits of the UTAD222 strain also shedding light on the physiology of H. guilliermondii species and the molecular basis of its adaptation to wine fermentation.
