Dataset of Air Cargo Supply Chain and Fruit quality: case study of mango shipment from Thailand to France

It provides a detailed dataset of air/mango temperatures and hygrometry inside a Unit Load Device fully loaded by 148 cartons in which 25 instrumented cartons were located at different positions. A carton contained 14 mangoes (Mangifera indica L. cv. ‘Nam Dok Mai Si-Thong’), the temperature and hygrometry were recorded every 5 min from packing house (Thailand) to FRISE-INRAE laboratory (France) through different steps of air supply chain (total shipment time 86.2h). The quality attributes were assessed at packing (D0) and at different days after arrival to FRISE (D3, D6, D9 and D15) for 2 storage temperatures (15°C and 21°C). The assessed qualities were product mass loss, peel colour, pH, sugar content and visual aspect. This dataset could be useful for fruit exporter to identify the position exposed to the quality degradation, thus, some prevention measures could be implemented. It could also be useful to researchers to compare this dataset with the numerical results e.g., by simplified thermal model and Computational Fluid Dynamic.
