This project investigates the transcriptomic response of Saccharomyces cerevisiae strain EC1118 during the fermentation of synthetic grape juice medium under both anaerobic and aerobic conditions. Employing a time-series experimental design, samples for RNA sequencing were collected at three intervals during the yeast growth phase in each treatment. This project aims to use this data to better understand the underlying genetic expression and regulation of important genes during anaerobic and aerobic fermentation.
