The fermentation of cereals allows the release of a great amount of bioactive compounds, well known for their health benefits, by the fermentation process of microorganisms.Microbial composition of a fermented whole wheat (Triticum aestivum) was assessed by NGS sequencing of the bacterial 16S rRNA gene.Our study provide insights on the nutraceutical potential of a functional food that can become strategic for maintaining of human health.
