The data present the measurement results of the degree of deacetylation of five commercial chitosans, which were processed using two methods and evaluated for their antimicrobial activity and cytotoxicity against the model mouse fibroblast cell line L929. A comparative assessment was carried out on chitosan-based materials obtained using the conventional method of dissolution in a (lactic) acid solution and an innovative method involving the saturation of an aqueous suspension of the microcrystalline form of this polymer with carbon dioxide. Additionally, the influence of nano-ZnO addition and its concentration in xerogels on the relationship between antimicrobial activity and cytotoxicity was evaluated.
