This project focuses on the comprehensive analysis of the genomic and metabolic pathways involved in the fermentation of chickpea milk by Lactiplantibacillus plantarum. The objective is to elucidate the mechanisms underlying flavor formation and B vitamin synthesis during this fermentation process.We have sequenced the genomes of two strains of Lactiplantibacillus plantarum, which are pivotal in enhancing the nutritional and sensory qualities of chickpea milk. By submitting these genomic sequences to NCBI, we aim to provide valuable resources for further research into the metabolic capabilities of these strains.Our omics analysis integrates genomics, transcriptomics, and metabolomics to identify and characterize key enzymes and pathways responsible for flavor development and B vitamin production. This research has significant implications for improving plant-based dairy alternatives and understanding the functional roles of beneficial microbes in food fermentation.The genomic data will contribute to a deeper understanding of Lactiplantibacillus plantarum's fermentation properties and facilitate the development of more efficient and flavorful chickpea milk products.
