The present project aims to evaluate the eukaryotic and prokaryotic communities' structures from Honduran coffee beans fermentation and its major microbial sources and contaminants (e.g., coffee fruits, leaves, soil, water). The metagenetic analysis of the 16S rRNA gene and ITS will provide a comprehensive view of the microorganisms proximate origins in coffee farms.
