本项目国内外首次以生物技术手段,对比分析不同微生物来源的耐超高温液化酶、真菌糖化酶、葡萄糖糖化酶和普鲁兰酶等的结构活性位点等特征,筛选到高活力、超高耐温复合酶制剂,研究出增强酶活的稳定剂,激活并稳固活性位点,达到酶活力功效最大化,同时,从有效控制生产中加工温度、时间、pH值等因子入手,结合后续脱色、离子交换、多效降膜浓缩等提取分离工艺,制取高麦芽糖浆、葡萄糖和麦芽糊精等系列淀粉糖。充分利用我省丰富稻米资源,系统探索稻米淀粉糖工艺参数,形成独特的生产工艺、有效调控产品质量,提高提取率,减少物耗,形成产品系列化生产达到最佳效益。在原料选用、生产工艺与产品、包装贮藏和运输中严格控制产品质量,保障产品优质安全。深入开展副产物高全利用研究,对制取淀粉糖后的米渣蛋白、稻壳、米糠油和米胚等副产物进行高效综合利用,实现生产物料的闭路循环利用,达到“三废”零排放和企业利益的最大化。

This project, for the first time both domestically and internationally, adopts biotechnological approaches to comparatively analyze the structural and active site characteristics of ultra-high temperature-resistant liquefying enzymes, fungal glucoamylases, glucose amylases, pullulanase and other enzymes derived from different microbial sources. We screened out a composite enzyme preparation with high activity and ultra-high temperature resistance, developed a stabilizer that enhances enzymatic activity, activates and stabilizes the active sites to maximize the overall enzymatic efficacy. Meanwhile, by effectively controlling key production factors including processing temperature, time and pH value, and combining with subsequent extraction and separation processes such as decolorization, ion exchange and multi-effect falling film concentration, we produced a series of starch sugars including high maltose syrup, glucose and maltodextrin. We made full use of the abundant rice resources in our province, systematically explored the process parameters for rice starch sugar production, established a unique production technology to effectively regulate product quality, increase extraction rate, reduce material consumption, and achieve optimal benefits through serialized product production. We strictly control product quality across raw material selection, production processes, products, packaging, storage and transportation to ensure the high quality and safety of the final products. We also conducted in-depth research on comprehensive utilization of by-products, efficiently and comprehensively utilized by-products such as rice dreg protein, rice husk, rice bran oil and rice germ generated after starch sugar production, realized closed-loop recycling of production materials, and achieved zero discharge of "three wastes" and maximized corporate benefits.
