黑芝麻是芝麻属植物的干燥成熟种子,含有丰富的营养物质,包括油脂、蛋白质、糖类、微量元素等,而且其还含有一些其他功能性成分,如芝麻素、黑色素等。生干芝麻在人们生活中的运用非常广泛,如榨油,制作豆浆等。因其富含油脂,酸败的可能大大提高。近年来,在监督抽检中,常常能出现黑芝麻酸价不合格的现象,其中生黑芝麻的酸价不合格占比较高。黑芝麻食品安全问题日益严峻。通过对黑芝麻酸价的检测数据进行分析,进而制定降低黑芝麻酸价的对策和方案。1、数据采集:随机选取市售黑芝麻,对其酸价展开分析调查;2、数据检测:利用国标法GB 5009.229-2016《食品安全国家标准 食品中酸价的测定》对各黑芝麻产品进行酸价测定;3、数据判定:若实测值大于技术要求3mg/g,则该样品为不合格样,不合格率为=不合格批次数/进行酸价检测的黑芝麻总批次数;4、数据应用:对黑芝麻的酸价进行检测,从黑芝麻中的不合格数据分析,可以看出生黑芝麻的不合格率远高于熟制黑芝麻的,从而为黑芝麻的储存,加工工艺提供参考;也为消费者购买此类商品提供意见和指南。

Black sesame seeds are the dried mature seeds of plants in the genus *Sesamum*. They are rich in various nutrients including oils, proteins, carbohydrates and trace elements, as well as several functional components such as sesamin and melanin. Raw dried black sesame seeds have wide applications in daily life, such as oil pressing and soy milk production. Owing to their high oil content, the risk of rancidity is notably elevated. In recent years, non-compliant acid value results for black sesame seeds have frequently been detected in supervised random inspections, with raw black sesame seeds accounting for a relatively high proportion of such non-compliant cases. Food safety issues related to black sesame seeds have grown increasingly severe. By analyzing the acid value detection data of black sesame seeds, countermeasures and schemes to reduce the acid value of black sesame seeds can be developed. The dataset construction workflow is as follows: 1. Data Collection: Randomly select commercially available black sesame seeds and carry out an analysis and investigation on their acid value. 2. Data Detection: Measure the acid value of each black sesame product using the national standard method GB 5009.229-2016 *National Food Safety Standard - Determination of Acid Value in Foods*. 3. Data Judgment: If the measured value exceeds the technical requirement of 3 mg/g, the sample is deemed non-compliant. The non-compliance rate is calculated as: non-compliance rate = number of non-compliant batches / total number of black sesame batches tested for acid value. 4. Data Application: Conduct acid value detection on black sesame seeds. Analysis of the non-compliant sample data reveals that the non-compliance rate of raw black sesame seeds is significantly higher than that of cooked black sesame seeds. This can provide references for the storage and processing technology of black sesame seeds, as well as offer guidance and suggestions for consumers when purchasing such products.
