Illumina MiSeq unjoined paired-end data from commercial and pilot olive fermentations. The goal of this study was to characterize microbial community dynamics during olive fermentations. After obtaining samples from the olives and brines of the fermentations, we sequenced the fungal ITS and bacteria 16S V4 regions.
