Leuconostoc citreum is a heterofermentative lactic acid bacterium that plays an important role in several food fermentations. L. citreum CW28 was isolated from Pozol, a fermented corn beverage of Mayan origin, and is able to produce a cell-associated inulosucrase (EC 2.4.1.9).
